- 50 gms Grated paneer
- 100 gms Fresh green peas
- 1/4 cup finely chopped capsicum
- 1 finely chopped carrot
- 1 cup (100 gms) finely chopped cabbage
- 1 large onion finely chopped
- 1/4 cup french beans finely chopped
- 2 tbsp Chopped coriander leaves
- 3 green chillies finely chopped
- 1/2 tsp. Ginder garlic paste(can add only ginger paste also)
- 1/2 tsp. Sugar
- 1/4 tsp. Garam masala powder
- 1/4 tsp. Haldi powder
- 1 & 1/2 tsp. Red chilli powder
- 1/2 tsp. Jeera powder
- 1/2 tsp. Chaat masala
- 1 tsp lemon juice
- 5 tbsp. Cornflour
- as per taste Salt
- as required Cooking oil
Steps to make to make Veg cutlets with methi and palak
- In a nonstick pan heat 1 tbsp. Cooking oil, as it's hot add 3 finely chopped green chillis, 1 tsp. Ginger garlic paste, fry for a min. Till the paste gets fried, then add 1 large onion finely chopped and fry for a min. Now add 1/4 cup finely chopped french beans, 100 gm. Fresh green peas, 1/4 cup finely chopped capsicum and mix it & add 1 finely chopped carrot, stir & add.
- Add 1 cup finely chopped cabbage (approx 100 gm), stir & cook the vegetables for 2 mins. Now add 1/2 cup Methi leaves (washed & chopped), 1/2 cup palak leaves (washed & chopped) both together & fry until it dries up. Cover the lid and cook for 2 mins. Open the lid,time to add masalas.Add 1/2 tsp. Jeera powder, 1 & 1/2 tsp. Red chilli powder, 1/2 tsp. Chaat masala, 1/2 tsp. Haldi powder, 1/4 tsp. Garam masala, 1/2 tsp. Sugar. Mix all the ingredients properly.
- Now add 5 boiled and mashed potatoes, mix it and add salt as per taste, 2 tbsp chopped coriander leaves, 1 tsp. Lemon juice and give it a proper mix & switch off the flame & add 50 gms grated paneer & mix it. Transfer the mixture in a mixing bowl & add 5 tbsp. cornflour. Mix it well. As it get cool, prepare round shaped cutlets with your hands and coat it with bread crumbs and press it & keep aside, keep all cutlets ready for frying(can also shallow fry)
- Heat good amount of cooking oil in a pan, as it's hot add the prepared cutlets in it carefully & fry them on a medium to high flame. Fry it on both sides till they change the colour and are crispy & remove it on an absorbant paper.
